Ingredients
Tangzhong
- 25 g bread flour
- 125 ml whole milk
Dough
- Tangzhong mixture
- 500 g bread flour
- 250 ml whole milk
- 75 g browned butter
- 75 g granulated sugar
- 1 large egg
- 25 g fresh yeast (or 7 g instant yeast)
- 2 tsp freshly ground green cardamom
- 1 tsp fine sea salt
Cardamom Butter Syrup
- 40 g browned butter
- 2 tbsp sugar
- 2 tbsp water
- ½ tsp freshly ground cardamom
Roasted Almond Filling
- 150 g whole almonds
- 150 g premium almond paste
- 30 g browned butter
- 2 tbsp honey
- 1 tsp vanilla bean paste
- 60 ml heavy cream
- Tiny pinch sea salt
- 2–3 drops orange blossom water (optional)
Vanilla Whipped Cream
- 500 ml heavy whipping cream
- 1 tbsp icing sugar
- 1 tsp vanilla bean paste
Decoration
- Powdered sugar
Instructions
Step 1 – Prepare the Tangzhong
Whisk together:
- Flour
- Milk
Cook over medium heat while stirring constantly until it becomes a smooth thick paste.
Allow to cool completely.
Step 2 – Brown the Butter
Melt the butter.
Continue cooking until it becomes golden brown and smells wonderfully nutty.
Cool until lukewarm.
Step 3 – Make the Dough
Toast the green cardamom pods lightly in a dry pan.
Grind the seeds finely.
Combine:
- Bread flour
- Tangzhong
- Milk
- Browned butter
- Sugar
- Egg
- Yeast
- Fresh cardamom
- Salt
Knead for 12–15 minutes until smooth, silky, and elastic.
Cover and allow to rise until doubled.
For even better flavor, refrigerate the dough overnight.
Step 4 – Shape the Buns
Divide into 12 equal pieces.
Shape into smooth round buns.
Place on baking trays.
Allow to rise for another 60–90 minutes.
Step 5 – Bake
Brush with beaten egg.
Bake at 200°C (390°F) for 10–12 minutes.
The buns should be deeply golden but still soft.
Step 6 – Brush with Cardamom Butter Syrup
While still warm...
Mix together:
- Browned butter
- Sugar
- Water
- Fresh cardamom
Brush every bun generously.
This keeps them wonderfully soft while adding incredible aroma.
Step 7 – Roast the Almonds
Bake the almonds at 175°C for about 8 minutes.
Cool completely.
Blend until finely ground.
Mix together:
- Ground roasted almonds
- Almond paste
- Browned butter
- Honey
- Vanilla
- Cream
- Sea salt
- Orange blossom water (optional)
The filling should be smooth, creamy, and intensely nutty.
Step 8 – Whip the Cream
Whip together:
- Heavy cream
- Vanilla
- Icing sugar
Whip only until soft peaks form.
The cream should remain silky and light.
Step 9 – Assemble
Cut a neat lid from each bun.
Scoop out a little of the soft interior.
Mix a little of the crumb into the almond filling.
Fill each bun generously.
Pipe a tall swirl of vanilla whipped cream.
Replace the lid slightly tilted.
Finish with a very light dusting of powdered sugar.
